Malcolm Hadlum holds firm beliefs in sustainable living, and that life is a mixture of destiny and will, leading him to create the organic Celtic Winery on the outskirts of Levin. 

 

Today the winery makes a wide range of wines using fruits including Black Doris and Omega plums, feijoas, and Braeburn apples, as well as ginger and locally-sourced honey. The recipes Malcolm has chosen are based on old Celtic traditions, because of the absence of chemicals in the processing, and a 100-year-old cork press is used. All of the wine is hand-bottled and hand-labelled, and some of the fruit is even trodden. Whatever the process, it's all done naturally, just "as it would have been". But it was an unexpected twist of fate that led Malcolm to this path in life.
